Chotěboř Brewery Project initiated in 2008, when ROSS purchased Pivotech s.r.o.  ROSS shares the original intent to build a regional brewery in town of Chotěboř.

The aim of the developing project is to design, build and run beer production. The beer will be brewed according to traditional Czech brewing standard, and it needs to get established in the market. Sequentially a joint-stock company is to be found to ensure the production and beer distribution.  In future ROSS plans to invite shareholders to join in the venture.

This project is one of ROSS's developing activities, this time in a production industry. The brewery building is carried out by authorized ROSS's departments, and in future ROSS plans to advertise and supply similar technologies to home market, as well as to international markets.

Currently the building completion is underway; the brewery construction completion date is spring 2009. By summer 2009 the trial production, and subsequent production is to be launched.

Brewery will produce traditional Czech Beer made from Czech ingredients in two-phase brewing.  The brew will be made of Moravian malt, quality aromatic hops of famous region of Žatec, and spring water from Czech Moravian Highlands (Vysočina). The product  will be sold as filtered, unpasteurised, and yeasty. The estimated yearly production is 10,000 hl,   with possible supplementary expansion of production level up to 25,000 hl a year. The brew will be fermented in open vessels, and  it shall mature in lager vessels for minimally 30 days. 

The products are to be a range of beers, as lager,  dark ale, flavored caramel  beer and non-alcoholic beer. Traditional Czech production technology securing correct bitterly taste is to be implemented. The lager beer is to be of yellow-golden color, fullness, and unique lasting frothiness. Unlike general mass production beer, this brew is to have a distinctive round taste, correct bitterness and quality beer foaming.
